Fermentation In cylindrical stainless steel vats with a conical top and capacity of 18,000 Kg at a controlled temperature of up to 30°C using destemmed grapes, without crushing, and the delestage method, completely breaking up the cap. The wine must is pumped over the cap daily during the 18 days it spends in the vats. Low pressure in vertical press.
Tasting Notes: An attractive ripe cherry red with a brick red rim. Oaky aromas with tobacco, toffee, and balsamic hints reinforced with ripe fruits (stewed cherries) and a lactic touch. Fresh and joyful, reminiscent of its elegant bouquet, and extremely long lasting.
This wine displays a wide array of aromas, with the wood, tobacco, toffee, and balsamic (eucalyptus, laurel) touches standing out, complemented by the appearance in the background of stewed ripe fruits, highlighted by a lactic touch, which gives complexity to the range of aromas. This is a delicate wine that will be best appreciated by savouring it in a relaxed manner.
